It’s the time of the season for…garden veggies! If you are lucky enough to have a garden yourself or to have friends/family that provide you with garden fresh produce, you are probably starting to reap the benefits. I’m fortunate enough to have a few friends who’ve been providing me with a wonderful assortment of fresh vegetables and herbs. The last couple weeks have been all about zucchini. Sautéed zucchini, grilled zucchini, zucchini quesadillas, zucchini bread with chocolate chips, zucchini bread without chocolate chips, zucchini frittata…etc, etc…
Last night we had hamburgers and after lightly sautéing some zucchini slices in garlic and olive oil I threw them on the grill alongside the meat to finish cooking. Once they had the always-appetizing grill marks I was after, I topped them with some parmesan cheese and fresh basil.
-1 small/medium zucchini or ½ medium/large zucchini, sliced
-2 Tbsp Extra Virgin Olive oil
-2 or 3 garlic cloves, minced
-1/4 tsp dried oregano
-light sprinkling of season salt (optional)
-Black pepper to taste
-parmesan cheese
-1/4 cup fresh basil leaves, chopped
Sauté zucchini slices in olive oil with garlic over medium/high until tender, adding oregano, season salt, and black pepper. Once tender place zucchini on grill for 2-3 minutes on each side. Plate and sprinkle with parmesan cheese and basil.
