I usually make a variation of this when I have limited time to whip up a meal or when I just can’t think of anything else to make and it works great for…well…breakfast, lunch, and/or dinner. It’s pretty simple really. Just take whatever vegetables, green leafies, leftover meat, and/or beans that you have, saute them up, and then just add eggs. Voila…you’ve got yourself a meal all in one bowl.
-Peppers (green, red, yellow, orange, spicy)
-Zucchini
-Yellow squash
-Eggplant
-Mushrooms
-Onions (red, white, gree, yellow, shallots, or leeks)
-Beans (black, cannellini, garbanzo, great northern, navy)
-Green leafies (kale, spinach, swiss chard)
-Meat (left over cooked meat, bacon, sausage)
-Garlic
-Herbs (basil, cilantro, oregano, thyme)
-And eggs of course!
Top it with some cheese, avocado, or even the Pico de Gallo salsa I posted about earlier…oh baby.
