October fest…

‘Tis the season…for pumpkins that is!  Here is a nice little pumpkin recipe for you.  Go ahead, get creative…add any other nuts/seeds/dried fruits that you think would be tasty!

PUMPKIN GRANOLA

-1 1/2 cup old fashioned rolled oats

-1/2 cup sliced almonds

-1/2 cup pumpkin seeds

-1/2 cup dried cranberries

-1/2 cup pumpkin puree

-1/3 cup coconut oil, melted

-1/3 cup unsweetened, shredded coconut (optional)

-1/3 cup maple syrup

-1 tsp vanilla extract

-2 Tbsp cinnamon

-1 Tbsp nutmeg

-1/8 tsp ground cloves

-1/8 tsp ground ginger

– pinch of salt

Preheat oven to 325 degrees. In a large mixing bowl, add pumpkin puree, coconut oil, maple syrup, vanilla extract, and spices. Mix well.  Then add nuts, seeds, and  and mix well with your wet ingredients.  Place parchment paper on a large baking sheet and spread mixture evening across baking sheet.  Place in oven and cook for 30-40 minutes, moving the granola around half way through to be sure it doesn’t burn.  Let it cool so that it hardens up and then mix in the dried cranberries, or whatever other dried fruits sounds yummy!
