Pico with peppers…

Make your own salsa!!  Sharpen your knife skills (pun intended) and do some chopping with this recipe. Pico de Gallo (pronounced peeko day guy-o)  salsa is a nice, fresh treat in the summer months.  Again, it has that cilantro/lime combo that I love so much. -3 or 4 Roma tomatoes, diced

-1/2 – 3/4 of a large red bell pepper, diced (you could also add in some yellow bell pepper for nice color)

-1/2 cup diced onion (I use white onion)

-1/4 cup finely chopped cilantro leaves

-Juice and zest of one lime (I usually zest the lime, then cut it in half and just squeeze the juice over the chopped ingredients–no need to get all fancy with a juicer)

Get your chop on and then combine the ingredients. Allowing the mixture to set for a while in the fridge before eating will let those flavors mesh together and it will taste that much better!
